A lot of people are scared of wild game. But I promise, it can taste better than beef! We love Elk, now that I have had time to practice how to actually prepare it. So I will share some secrets. First, butcher it well!! If you leave any fat on the meat, when it’s stored, it marinates a gamey taste. With beef it’s the opposite. So you have to start right. Then, get creative! We grilled up some steak, only seasoned with a little salt. Then I made a fresh pico! All you need is tomatoes, cilantro, red onion and Rogliano’s Salad Dressing (for pico, I prefer the red dressing). That’s it!!! Easy right?? But, it gets better!!! Wait til you try it, you’ll love it!!
