Do you have an obsession with pasta like I do? I love making pasta for the fam, it makes plenty and is relatively cheap! One of our favs is Squasini Pasta. The sauce is made from Yellow Squash and zucchini but is super creamy, it’s such a great way to hide nutrient rich veggies! Check out the recipe below!

Squashini Pasta
Ingredients:
1 pkg of your favorite pasta
1-2 cups heavy cream
1 yellow squash
1 zucchini
Olive Oil
2 cloves minced garlic
1-1/2 cup Parmesan cheese
Salt and pepper
*optional* grilled chicken
Directions:
Prepare your pasta per the package instructions.
Peel your squash and zucchini. Using a cheese grater, grate the squash and zucchini.
In a large sauté pan, heat olive oil and garlic until fragrant, about 1-2 minutes in high. Then add your grated squash and zucchini. Cool until veggies are translucent and almost looks like one big blob of veggies. Approximately 4-5 minutes. Depending on the size of your squash and zucchini you may only need 1 cup cream but if they are a little larger you can do 1 1/2 or even 2 cups heavy cream. Pour slowly to see how much you need. Add 1 cup Parmesan cheese. Once blended it should appear like Alfredo sauce. You can always add more cheese if needed. Then add salt and pepper. I usually add 2 tsp salt and 1 pepper. You may like it a little different. Let simmer for 5 minutes until all cheese is melted. Then pour over cooked pasta and add grilled chicken if you are choosing to add chicken, and enjoy!!
