Sweet Potato Fries

So, I have to be honest, I am a French fry fanatic! I still don’t understand why you can’t eat them for every meal! That being said, I like to think sweet potato fries are better for you, so I’m allowed to eat more of them, right?? Right or not, it makes me feel better. Plus, they are so dang delicious, I prefer them over regular fries.
When you are making sweet potato fries, the first thing is to get some sweet potatoes, BUT do not buy them while you are doing your regular shopping for the week if you don’t plan on cooking them until late in the week; they mold!!!! Quite fast and quite easily. So, buy them the day of or day before you plan on using them.
First, peel them, then cut them. I cut them so they are 1/4” thick or maybe a little thinner on some to get a good crispy one :) but, if you prefer thicker, follow your heart! I just wouldn’t go thicker than 1/2”.
You can either oven bake them or deep fry them. Both are excellent. But, for this example, I deep fried them, cause come on, more fat the better, am I right?
The secret to a good sweet potato fry is cornstarch!!! Yup, cornstarch. I mix the same amount of water to cornstarch in a gallon ziploc bag. Now I did a cup of water and cup of cornstarch because I was making a large batch. You can even do a 1/4 cup of each of you have a smaller batch. Mix it really well in the bag and and your cut slices to the bag. Mix it well.
I have a cute little deep fryer that my hubby got me for Christmas, so that’s what I used. You can do it on the oven but it may prove a little more difficult. Then add one fry at a time so that they don’t stick together. Do small batches. Fry til they are golden brown. Then dump them out on a paper towel lined  cookie sheet. Then I sprinkle seasoned salt on them, mmm yum. You can totally eat them plain, because they are so dang good! Or you can eat them with some dipping sauce, I prefer Stephens Gourmet Fry Sauce. Repeat for however many batches you want!
Sweet Potato Fries:
Sweet Potatoes
Oil for frying
Seasoned salt
Cornstarch
Water
Gallon bag

Directions:
Peel and slice fries 1/4” in thickness
